Sausage and Egg Casserole

We are always running around trying 2 get out the door and never have time so when i found this recipe i gave it a try because u can have it ready the day before and its a great hit

Ingredients

  • 1 pound bulk  pork sausage
  • 6 eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 1 teaspoon ground mustard
  • 6 slices white bread, cut into 1/2-inch cubes
  • 1 cup shredded Cheddar cheese

Directions

  1. In a skillet, brown and crumble sausage; drain and set aside. In a large bowl, beat eggs; add milk, salt and mustard. Stir in bread cubes, cheese and sausage. Pour into a greased 11-in. x 7-in. x 2-in. baking dish. Cover and refrigerate for 8 hours or overnight. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350 degrees F for 40 minutes or until a knife inserted near the center comes out clean.

Meat Loaf

**This is my families favorite recipe when i first seen that it had milk I was nerves but it actually turned out to be good.
Ingredients:
  • 1 to 2 pounds ground beef
  • 1 egg
  • 1/2 to 1 cup cup milk
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce or steak sauce
  • Seasonings, to taste
  • 1 chopped onion or 1 package onion soup mix
  • 1 chopped green pepper
  • 1/2 cup crumbs (bread, cracker, oatmeal or cornflakes)
  • 1/2 cup tomato soup or sauce or ketchup
 
Preparation:
I crumble my ground beef in a large bowl. In a smaller bowl I combine my liquid ingredients; i.e. eggs, milk, and ketchup, worcestershire sauce, and/or steak sauce (whatever I happen to have on hand.) I beat well; if I use any seasonings I add now (oregano, basil, parsley, paprika). I pour over the meat and mix well. If I am using chopped veggies (onions, peppers) and/or onion soup mix I add now and mix again. I then add my crumbs, (bread, cracker, oatmeal, and/or cornflakes) and mix again. I then put in a loaf pan, and top with tomato soup, or sauce, or ketchup. I then bake it for 1/2 an hour at 400 degrees, then lower to 350 and continue baking for an hour.

Green Spaghetti (Tallarin Verde)

** So this is a really good recipe the only thing i would change is the Walnuts I would not Add it. You normally eat this with a steak.

Ingredients:
  • 2 lbs of spaghetti or linguine noodles
  • 1/2 cup of evaporated milk
  • 200 grams of fresh basil, rinsed
  • 400 grams of fresh spinach, rinsed
  • 1 clove garlic
  • 1 small onion, chopped
  • 3 walnuts (shelled)
  • 1/2 cup of vegetable oil
  • 300 grams of queso blanco or queso fresco or farmer’s cheese (You can substitute feta in a pinch, but remember to adjust the salt)
  • Salt
1)  Cook the noodles according to the directions – al dente, of course!
2) While the pasta cooks:  In a large frying pan, saute the onion and the minced garlic in a little bit of oil.  When the onion is translucent, add the basil, and then the spinach.  Cook just until the greens are wilted.
3) Move the greens mixture to the blender, and add the milk, the walnuts, and the cheese.  Liquefy until well blended, but it’s nice to still see some flecks of basil and spinach.  Add salt to taste, if needed.
4) When the pasta is done, drain it and then toss it together with the pesto/spinach sauce

Red cooking souce (Aji Especial)

Ok so Aji Especial goes in most Peruvian plates but it is hard to obtain so i am going to tell you how to make it and the best thing is you just put it in a jar in your refrigerator and you have some ready at all time. This recipe does not need a lot of things and is not complicated. You will need

  • 6-8 California Chile (this is dried Chile)
  • 1 tea spoon Vinegar
  1. So first things first you will need to open up the chilies and make sure you clean them really good taking out the seeds and vain if possible ( chile is very hot so wash hands after).
  2. Now you put them in water to boil for about 5 to10 min. If you like your food spice then you can go to the next step if not then keep reading so after it has boiled for 5 min you drain the water and add more water and let it boil once again.
  3. When your chiles have boiled drain the water and add the chiles in the blender with 1/2 cup of water and the vinegar.
  4. The last thing is let it cool down and place it in a jar and in the refrigerator.

White Rice

Ok so I know their are a lot of people that say they can make rice but i have the recipe and its super easy to make. You will only need
  • 2 cups Rice
  • 1 tabel spoon Oil
  • 1 tea spoon Garlic
  • 2 cups Water
  • 1 tea spoon Salt
  1. Ok so first you are going to place the rice in a bowl wash it make sure you rean all the water.
  2. Now place the oil in a hot pot and add the garlic
  3. Once the garlic is golden brown you add your water and salt give it a quick stur and add the rice
  4. Leave it on Med. untill you reach a boil (Do not stur rice) 
  5. Place the rice on low and cover it for about 15 - 20 min till rice is done.

Peruvian Fajitas (Lomo Saltado)

Ok so here is a simpal way of making Peruvian Fajitas (Lomo Saltado).
 First you will need the following
Ingredients

  • 1/2 lb. Meat (any tender meat of your choose)

  • 1 Med. size Onion

  • 2 Med. Tomatos

  • 1/2 a handfull Silantro

  • Salt Depends on Tast

  • Pinch of Pepper and Cumin

  • 1/2 Tea spoon Garlic ( ether blended or powder Garlic)

  • 3 Tabel spoons Oil

  • 2 Tabel spoons Soy Souce

  • 2 Tabel spoons Vineger

  1. Now comes the Cutting: the meat should be cut the size of your index finger, the onions need to be cut in 1/2 then cut each 1 in 4 peases long ways, Same thing with the tomatos. The Silantro should be finly chopped.

  2. Now we season the meat; you will need to place the meat in a bowl and add your seasonings witch are salt, pepper, cumin, and garlic.Make sure all the meat gets seasoned 

  3. Now lets starts cooking; when your frying pan is hot add your oil, next add your seasoned meat and give it a stur, when your meat is golden brown add the tomato and onion, give it a quick shake and add the soy souce and vineger. Let it cook for about 2 min. with a couple of sturs and then you turn off the stove and add the silantro

  4. Now we can eat this plate it is best served with a side of french fries and white rice.
*** Tip: when cooking make sure flame is on high***
